FUDGEY BROWNIES


My dear friend shared this recipe with me and I absolutely love it for a chocolate treat. I’ve made a few versions of it as will with different types of cacao/choco-chips and they have all turned out.




STATS

Serves 6 peeps and will work out to be around 250cal depending on what variation you use. I like to serve mine with low cal ice cream like Halo, or if I’m being naughty the full on real ice cream.


INGREDIENTS


1.5 cups raspberries frozen ( I also used blueberries before when I ran out of raspberries both were tasty.)

8oz (225g) of chocolate chips ( stevia chocolate chips, milk chocolate or cacao paste can be subbed)

1/4 cup (30g) cacao powder ( coco powder also works well here)

1 pinch of salt

1/2 tsp baking soda

1/2 cup almond flour ( regular flour, oat flour, coconut flour all can be subbed)

1 cup raspberries frozen ( or blueberries to be mixed into completed batter)


METHOD


I recently purchased the small bullet style 1000W ninja and I am loving it. Used it for this recipe and it worked great.

Preheat oven to 350F.

Take the first portion (1.5 cups) raspberries and microwave them around 2 minutes to get hot and soften them up. Toss in blender and blend until seeds are broken up. I did mine for about 2 minutes.

Melt chocolate chips or paste. NOTE: When I did this the first time I thought I would be fancy and melt them on a double boiler. Turns out I didn’t know what the fuck I was doing and water got in them. If that happens it becomes tar. I recommend just microwaving  them in a wide bowl-the more surface area the better and do it in about 1 min increments to prevent burning the chocolate. That is a waaaay easier method. You’re welcome.

Add remaining dry ingredients into berry puree and add melted chocolate and blend that shit up again.Transfer into ramekins or baking dish (make sure to line or grease whatever dish you are using, I used spray coconut oil).

Sprinkle the 1 cup of berries overtop bake for 35-40 minutes.Allow to cool at least 30 minutes before diving in. They will get harder once cooled.

As mentioned above I like to add some ice cream of choice on top, it’s heavenly. Make sure to share with friends or eat sparingly over the week!
